You Don't Have to Go Out For Good Food!

So here you are, a typical urban or suburban couple on a typical evening. The conversation goes something like this:

"What do you want to eat?"

"I dunno. What's in the fridge? We have any leftovers?"

"I want some good food for a change. Let's go out!"

And so away you go, and with tax and tip you end up laying out $40 or $50 for a meal that, while it is satisfying, is nothing you couldn't create at home for less than half the price if you just did a little preparation on your own. The secrets to good food aren't having tons of cooking knowledge or restaurant experience, they are preparation and the willingness to experiment and learn.

Say you love steak, but you're sure that the only way you'll get that steakhouse taste is to go to Ruth's Chris and lay out $60 or $80 per person for dinner. Would you believe you can get a steak just as good at home? It's true!

The first thing is to get the best piece of beef you can find. Steakhouses in general use USDA Prime beef, the best quality available. You'll pay up to $20 a pound for it, but that will be your only real expense for the adventure.

Next, you'll want to age it, unless the place where you buy it already does so for you. A lot of high-end butcher shops dry-age their beef, but if you can't find one that does, you can do it yourself in your refrigerator. Just put the steak on a rack over a plate or pan, cover it with a porous lid of some sort and place it in the back of your refrigerator for a couple of days. You'll end up with great aged beef!

Don't over season the beef, either. A little cracked pepper and kosher or sea salt put on a few minutes before grilling is all you need. Let the steak come to room temperature, then cook either over a hot grill or in a cast-iron skillet heated to 500 degrees in your oven. A couple of minutes on each side and you've got good food, as good as any restaurant, in your own home! It's easy to make good food.

Two Tasty Enchilada Recipes


An enchilada is a corn tortilla wrapped around a filling and topped with chili sauce. There are various recipes that you can choose from if you want to make some authentic Mexican food recipes.

This recipe can feature meat, poultry, beans, cheese, or a combination of these. The most important parts are the corn tortilla and the chili sauce and enchiladas are amongst the most popular Mexican food recipes ordered at Mexican restaurants.

Sonora Style Enchiladas

These tasty snacks feature green onions and Longhorn cheese, as well as salad. This is a very simple recipe and it makes a great dinner for a busy weeknight evening.

What you will need:


1 chopped onion
2 cups red chili sauce
4 chopped green onions
1 1/2 cups shredded Longhorn cheese
12 corn tortillas
1/4 shredded lettuce
2 chopped tomatoes
Sour cream and salsa, to serve

How to make them:

Preheat the oven to 350 degrees F. Heat the chili sauce in a pan. Dip a tortilla in the sauce then lay it on a cookie sheet. Ladle a tablespoon of sauce over the tortillas and sprinkle cheese on top.

Add some chopped onion. Repeat this to make a stack of three. Bake for ten minutes, then garnish with tomato, lettuce, and green onions. Serve the enchiladas with salsa and sour cream.

Easy Microwave Enchilada Recipe

You can use the microwave to make enchiladas but they will still take a total of about twenty minutes to cook, so the oven might be just as good. If you are using the oven to cook something else though, this microwave enchilada recipe can be handy. The julienne-cut vegetables add nutrition and color to these tasty Mexican snacks and the taco seasoning adds spiciness.

What you will need:


2 tablespoons water
1 sliced onion
1 cup peeled, julienned carrots
1 chopped tomato
2 cups sliced mushrooms
2 cups julienned zucchini
1 chopped green bell pepper
10 corn or flour tortillas
1 envelope taco seasoning mix
1 1/4 cups grated Monterey Jack cheese

How to make them:

Put the water and onion in a microwave-safe dish and cover it. Cook on high for two minutes, and then add the carrots, tomato, mushrooms, zucchini, bell pepper, and taco seasoning. Microwave on high for fourteen minutes or until the vegetables are tender.

Wrap the tortillas with wax paper and cook them on high until they are warm. This will take about fifty seconds. Put a tablespoon of the vegetable mixture at one end of the tortilla and sprinkle a tablespoon of cheese over the top.

Roll the tortillas up and put them seam-side down in a twelve by eight inch dish. Pour the rest of the vegetable liquid over them, then cover the dish with wax paper and cook the tortillas for five minutes on high. Sprinkle the rest of the cheese over them and serve.

1 (16 ounce) garbanzo beans (chickpeas), drained and rinsed1/2 cup basil leaves1 clove garlic1 tablespoon olive oil1/2 teaspoon balsamic vinegar1/2 teaspoon soy saucesalt and ground black pepper to tasteCombine the garbanzo beans, basil, and garlic in a food processor; pulse several times. Use a spatula to push mixture from sides of processor bowl. Pulse the mixture again while drizzling in the olive oil. Add the vinegar and soy sauce; pulse until combined. Season with salt and pepper. First of all, I did not have any balsamic vinegar on hand, so I used red wine vinegar instead. Secondly, while pureeing the mixture, it became very dry, so I added water until it was the desired consistency. Other than those two changes, the recipe was fantastic! Healthy Appetizers: Grandma Oma's Pickled Okra | Submitted By: Lorelei Rusco

1 1/2 pounds fresh okra3 dried red chile peppers3 teaspoons dried dill2 cups water1 cup vinegar2 tablespoons saltDivide the fresh okra evenly between 3 sterile (1 pint) jars. Place one dried chile, and one teaspoon of dill into each jar. In a small saucepan, combine the water, vinegar and salt. Bring to a rolling boil. Pour over the ingredients in the jars, and seal in a hot water bath for 10 minutes. Refrigerate jars after opening. Amount Per Serving  Calories: 10 | Total Fat: 0g | Cholesterol: 0mg

I've canned this recipe twice, last fall and again early this summer when there was plenty of fresh tender young okra available. Many people don't know, but okra is excellent for the digestive system. 'this recipe is fantastic garnish to a hearty winter meal of greens, beans, jambalaya, or your favorite stew. I have only one suggestion, which came from my aunt, to add a level teaspoon of sugar (or less if you prefer) to each packed jar before adding the hot vinegar mixture. This doesn't change the pickled or spicy flavor to sweet but just mellows the exciting flavor. Interestingly, people who say they generally don't like okra, love these pickled treats. Healthy Salads: Schmag Salad | Submitted By: Matt Van Blaricom

1 large grapefruit2 tablespoons honey1/3 bunch fresh cilantro, chopped1/8 teaspoon orange extract2 jicama, peeled and diced2 pears - peeled, cored and diced3 oranges - peeled, sectioned, and cut into bite-size pieces2 Golden Delicious apples - peeled, cored and diced1 mango - peeled, seeded and cubedCut the grapefruit in half, and set aside one half. Juice the remaining half, and combine with honey, cilantro, and orange extract. Set aside. Segment the reserved grapefruit, and combine with jicama, pears, oranges, apples, and mango in a large bowl. 2 pounds sweet potato, peeled and cubed2 tablespoons orange juice3/4 cup brown sugar1/8 teaspoon ground nutmeg2 tablespoons butter, cubed1 cup miniature marshmallowsPreheat oven to 350 degrees F (175 degrees C). In a large saucepan cook sweet potatoes in salted water over medium-high heat for about 20 minutes, or until done. Drain, and add orange juice, brown sugar, nutmeg and butter. Whip until smooth. Spread into a medium size casserole dish and top with marshmallows. Bake in preheated oven for about 10 minutes, or until marshmallows are golden brown. 1 tablespoon vegetable oil4 boneless, skinless chicken breasts1 teaspoon seasoning salt1/2 teaspoon onion powder2 teaspoons minced garlic1/2 cup soy sauce, divided1 large onion, cut into long slices2 tablespoons cornstarch2 1/2 cups water1 green bell pepper, sliced4 roma (plum) tomatoes, seeded and choppedHeat oil in a large skillet over medium heat. Season chicken with salt and onion powder, and place in skillet. Cook for about 5 to 7 minutes, then add the garlic, 4 tablespoons soy sauce, and half of the sliced onion. Cook until chicken is no longer pink, and the juices run clear. Dissolve cornstarch in water in a small bowl, and blend into the chicken mixture. Stir in 4 tablespoons soy sauce, bell pepper, tomatoes, and remaining onion. Simmer until gravy has reached desired consistency.
