Low-Carb Recipes: Crab Swiss Bites | Submitted By: Doreen

1 (6 ounce) can crabmeat, drained and flaked1 tablespoon sliced green onion1/4 cup shredded Swiss cheese1/2 cup mayonnaise1 teaspoon lemon juice1/4 teaspoon curry powder1 (8 ounce) package dinner rolls1 (5 ounce) can water chestnuts, drained and slicedPreheat oven to 400 degrees F (200 degrees C). In a medium bowl, mix together crabmeat, green onion, Swiss cheese, mayonnaise, lemon juice and curry powder. Separate dinner rolls into 3 pieces each. Spoon equal portions of the crabmeat mixture onto the roll pieces. Top with water chestnuts. Bake in the preheated oven 10 to 12 minutes, or until bubbly and golden brown. Low-Sodium Recipes: Caesar Salad Croutons | Submitted By: Ronald Stirling

1/2 bulb garlic, peeled1 cup extra virgin olive oil3/4 (1 pound) loaf sourdough bread, cubed1 cup gheeCombine garlic and oil in a small saucepan. Simmer until cloves are a light gold color, about 15 minutes. Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids. Set garlic oil aside. Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet. Arrange bread cubes in a single layer on baking sheet. Bake, turning bread cubes periodically, until lightly browned, about 20 minutes. In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat. Cook toasted bread cubes in batches until light to medium golden brown, turning frequently. Add more ghee and garlic oil as needed. Gluten-Free Recipes: Beet Salad | Submitted By: Robbie Rice

4 bunches fresh small beets, stems removed2 tablespoons olive oil1 tablespoon lemon juice2 tablespoons white wine vinegar1 tablespoon honey2 tablespoons Dijon mustard1 teaspoon dried thyme, crushed1/2 cup vegetable oilsalt and pepper to taste2 medium heads Belgian endive1 pound spring lettuce mix1 cup crumbled feta cheesePreheat oven to 450 degrees F (230 degrees C). Coat beets lightly with oil and roast for approximately 45 minutes, or until tender. Allow to cool thoroughly, then peel and dice. For the dressing, place lemon, vinegar, honey, mustard, and thyme in a blender. While blender is running, gradually add 1/2 cup of oil. Season to taste with salt and pepper. Place spring lettuce mix in a salad bowl, pour desired amount of dressing over greens, and toss to coat. Rinse endive, tear off whole leaves, and pat dry. Arrange 3 leaves on each plate. The reviewer gave this recipe 3 stars. This recipe averages a 4.3 star rating. I think this is a good recipe, but even though I like all the ingredients, I did not care for the salad. I chose to reduce the oil to 1/3 cup, & used rice vinegar in place of white wine vinegar because that is what I had on hand. I would increase the amount of vinegar & lemon juice combined, to equal the amount of oil. I would recommend reducing the amount of thyme by half, especially if marinating overnight/leftovers, unless you really like a strong thyme flavor. When baking the beets I also recommend standing them on the stem end to bake, because I found it difficult to peel them & see where the peel was,when baked on whatever surface landed on the pan. This may be due to using larger beets which had to bake longer. I'm disappointed that I didn't like the finished salad better than I did. Was this review helpful? [ YES ]

4 tbsp paprika

2 tsp garlic salt

1 tbsp celery salt

1 tbsp black pepper

1 tsp ground ginger

3 tbsp MSG (Accent)

1/2 tsp basil

1/2 tsp oregano

2 cups flour

1/2 tsp salt

1/2 tsp thyme

Eggs (1 for every 3 pieces of chicken)

Bread Crumbs

Directions:

Mix all ingredients together in a large bowl.

Roll chicken pieces in beaten eggs.

Roll them in regular bread crumbs .

Roll them in mixture of spices.

Fry in Deep Fryer according to Manufacturer's instructions for chicken.

Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size. Egg-Free Recipes: Spectacular Marsala Glazed Carrots with Hazelnuts | Submitted By: Barbara M.

1/2 cup coarsely chopped hazelnuts, toasted1 pound baby carrots, halved1 cup water1/2 teaspoon salt3 tablespoons unsalted butter2 shallots, minced1/2 cup dry Marsala wine1/2 cup sugarPreheat oven to 300 degrees F (150 degrees C). Spread chopped hazelnuts in a single layer on a baking sheet. Bake in the preheated oven for 5 to 10 minutes, stirring once or twice, and watching very carefully as they will burn very easily. Remove from the oven when browned and fragrant. Cut baby carrots in half cross-wise. In a saucepan over medium heat, bring water, carrots, salt, and 1 tablespoon of butter. Bring to a boil, and reduce heat to low. Cover, and simmer very lightly for 10 to 15 minutes, or until tender but firm. Drain and set aside. Return pan to the stove over medium heat, and melt the remaining 2 tablespoons of butter. Cook shallots in the melted butter, stirring occasionally, until translucent. Add Marsala and sugar, and stir continually until sugar is completely dissolved. Continue simmering until sauce has thickened slightly. Once thickened, toss carrots and hazelnuts with the sauce until well coated. Garnish with parsley, if desired. Serve immediately. 1 tablespoon vegetable oil4 boneless, skinless chicken breasts1 teaspoon seasoning salt1/2 teaspoon onion powder2 teaspoons minced garlic1/2 cup soy sauce, divided1 large onion, cut into long slices2 tablespoons cornstarch2 1/2 cups water1 green bell pepper, sliced4 roma (plum) tomatoes, seeded and choppedHeat oil in a large skillet over medium heat. Season chicken with salt and onion powder, and place in skillet. Cook for about 5 to 7 minutes, then add the garlic, 4 tablespoons soy sauce, and half of the sliced onion. Cook until chicken is no longer pink, and the juices run clear. Dissolve cornstarch in water in a small bowl, and blend into the chicken mixture. Stir in 4 tablespoons soy sauce, bell pepper, tomatoes, and remaining onion. Simmer until gravy has reached desired consistency. Sugar-Free Recipes: Cheddar and Olive Balls | Submitted By: M. Hammond

18 1/2 ounces extra sharp Cheddar cheese, shredded1/2 cup butter, softened1/2 teaspoon paprika1 1/2 cups all-purpose flour45 pitted green olivesAllow cheese to sit out until it is at room temperature. In a large bowl, mix together the cheese, butter and paprika using a pastry blender. Gradually mix in flour, first using the pastry blender, then using your hands. Mix until the dough pulls together. It should form a solid ball with a smooth appearance, but have a crumbly texture when pulled apart. If dough appears too dry, add more shredded cheese. Preheat the oven to 375 degrees F (190 degrees C). Pinch off a small piece of dough, and cover an olive with it. Roll gently between your palms to smooth and seal the olive inside the ball. Place onto an ungreased cookie sheet and repeat with remaining dough and olives. Place the tray of covered olives into the refrigerator for 10 minutes to firm up.
