Secret Restaurant Recipes!

Wouldn't it be great if you could finally discover how they make all of those delicious dinners at your favorite restaurants? Some of my favorite dishes have to do with chicken... I've prepared a simple recipe for you to cook up the perfect Italian chicken for yourself; here it is:


ITALIAN CHICKEN


Prep and Cook Time:


30 min.


Ingredients:


4 to 6 boneless, skinless chicken breasts


1 lg. jar spaghetti sauce of choice


2 cups grated mozzarella cheese


Parmesan cheese


Salt, pepper, garlic


Fettuccine noodles


Directions:


Grease large casserole dish. Season chicken breasts with salt, pepper and garlic. Place flat in casserole dish. Bake for 20 minutes turning once. Pour spaghetti sauce over chicken and sprinkle generously with mozzarella cheese.


Bake until bubbly and cheese has melted. Prepare noodles according to directions and serve chicken and sauce over noodles. Top with grated Parmesan cheese.

1 Large beef bone with marrow
3 Beef bones with pieces of chambarete
1/4 Cup Onion
1 Tablespoon Fresh Cilantro
3 Cut Potatoes
1 Cup Fresh Peas

How to Make It

Begin by cooking the meat and bones in about 6 cups of water and mix in the garlic and cilantro. This should be done over medium high heat. As foam forms on the top, be sure you skim it off to ensure the flavor of the broth does not get too intense. When you have a good amount of foam off, bring the water to a boil, and allow the meat to soften. When this occurs, add in your potatoes and peas and then let them cook at medium high heat until they become soft. Remove any last minute foam and then salt and pepper to taste. Serve warm.

Ingredients:

Cheese Stuffing
1/2 cup smoked shredded cheese (provolone or gouda)
8-oz package mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1/2 cup breadcrumbs
1 tsp fresh garlic, minced
1/4 tsp crushed red pepper flakes
2 Tbsp sun-dried tomato slivers (drain first if in oil)
1/3 cup green onions, thinly sliced
3/4 cup sour cream (6 oz)
1/2 tsp salt
1/2 tsp black pepper
Sauce
1 small onion, cut in half and thinly sliced lengthwise
24 fl oz Marsala wine
8 fl oz heavy cream
2 small containers button mushrooms, thinly sliced (6 cups)
Salt and pepper to taste
Other
2 lbs skinless, boneless chicken breasts
4 fl oz olive oil
2 cups all-purpose flour

Instructions:

1. Pre-heat oven to 350°F.
2. Combine all the cheese stuffing ingredients into a mixing bowl.
3. Pound each breast of chicken between 2 sheets of plastic wrap until they are ¼ to ½ an inch thick.
4. Spoon desired amount of cheese stuffing into one lobe of each chicken breast. Fold over so cheese stuffing is contained.
5. Heat sauté pan, adding olive oil and flour. Season to taste with salt and pepper. Put the chicken breast in flour, shaking off excess and sauté in preheated oil, cooking until each side is golden brown.
6. Remove chicken from pan, place in a baking dish and bake in oven for 10-20 minutes.
7. Add onions to sauté pan and stir to loosen chicken drippings. Add mushrooms.
8. Heat wine to a simmer and add heavy cream. Simmer on low heat until mixture is reduced by half.
9. Place cooked chicken breasts on a plate and top each with the onions, mushrooms and sauce mixture.
10. Serve with vegetables, mashed potatoes or rice, and enjoy your delicious creation!

1 butternut squash, halved and seeded1 acorn squash, halved and seeded3 tablespoons butter1/4 cup chopped sweet onion1 quart chicken broth1/3 cup packed brown sugar1 (8 ounce) package cream cheese, softened1/2 teaspoon ground black pepperground cinnamon to taste (optional)fresh parsley, for garnishPreheat oven to 350 degrees F (175 degrees C). Place the squash halves cut side down in a baking dish. Bake 45 minutes, or until tender. Remove from heat, and cool slightly. Scoop the pulp from the skins. Discard skins. Melt the butter in a skillet over medium heat, and saute the onion until tender. In a blender or food processor, blend the squash pulp, onion, broth, brown sugar, cream cheese, pepper, and cinnamon until smooth. This may be done in several batches. Transfer the soup to a pot over medium heat, and cook, stirring occasionally, until heated through. Garnish with parsley, and serve warm. Sugar-Free Recipes: Spinach Stuffed Chicken Breast | Submitted By: JERSEYGIRL_CHELL

1 (10 ounce) package fresh spinach leaves1/2 cup sour cream1/2 cup shredded pepperjack cheese4 cloves garlic, minced4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness1 pinch ground black pepper8 slices baconPreheat the oven to 375 degrees F (190 degrees C). Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic. Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish. Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon. We did marinate the chicken in a buttermilk marinade, as a previous user suggested. The bacon turned out great, and we added tons of cheese. Mozzerella, Parm, Feta, etc. We just cooked the spinach as directed on the label, not with the microwave as the recipe suggests. We also actually ended up with a lot of the spinach/cheese-stuffing left over. Oh well. We probably measured something wrong. One suggestion: There was a ton of bacon grease that was sort of oozing out onto the baking dish when it was in the oven. Most of it got burned onto the baking dish. I'd suggest putting the chicken breasts on aluminum foil and then put that on a baking dish, just to minimize the scrubbing of the burnt bacon grease off the baking dish. Very good chicken though. We used a lot of toothpicks, but we probably didn't need to. Make sure you pound the breasts to 1/2 inch so it's easy to roll up too. Bottomline: Tasty, tasty dish. Try it. 5 stars. I patted some of the grease out as suggested by another reviewer. I used about a half cup each of mozz. and parmesan cheese. I also seasoned the chicken breast with seasoned salt and seasoned the spinach mixture with garlic powder, onion powder, Tony's, salt, and pepper. We had some left over spinach stuff so I put it in a very small baking dish, baked it, and made a yummy dip out of it! :) That was delicious too!! Was this review helpful? [ YES ]

1 cup quinoa, rinsed2 cups water1 onion, chopped1 pound fresh mushrooms, sliced2 apples - peeled, cored, and chopped1/4 cup pine nuts1/3 cup raisins2 cloves garlic, minced1 teaspoon salt1/4 teaspoon ground black pepper2 teaspoons poultry seasoningPlace the quinoa and water in a large, microwave-safe bowl; cover. Cook on HIGH for 20 minutes. Stir the onion, mushrooms, apples, pine nuts, raisins, garlic, salt, pepper, and poultry seasoning in with the quinoa. Pack lightly into uncooked turkey. Healthy Main Dish Recipes: Passover Zucchini-Stuffed Chicken | Submitted By: Leah Perez

8 bone-in chicken breast halves, with skin2 zucchinis, shredded3 cups matzo farfel2 eggs, beaten2 tablespoons chicken bouillon powder1 onion, choppedsalt and pepper to taste1 dash garlic powder1 dash onion powderPreheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet or 9x13 inch baking dish. Wash and clean the chicken breasts. Place farfel in a bowl and cover with hot water for 3 or 4 minutes, until soft. Drain and squeeze out water. In a medium-size mixing bowl, combine zucchini, farfel, eggs, chicken soup powder, onion, salt, pepper, garlic powder, and onion powder. Place 2 to 3 tablespoons of the stuffing under the skin of each chicken piece and arrange them on cookie sheet. Bake at 375 degrees F (190 degrees C) for 40 to 50 minutes. Drain off fat and serve. Healthy Salads: Sunday Best Fruit Salad | Submitted By: Pattie Price

1 (20 ounce) can pineapple chunks, juice reserved2 apples, peeled and cored1 (21 ounce) can peach pie filling2 bananas, peeled and diced3 kiwis1 pint strawberriesIn a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes. In a large salad bowl, combine the peach pie filling and pineapple chunks. Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes. Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside. Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together. Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve. Amount Per Serving  Calories: 183 | Total Fat: 0.5g | Cholesterol: 0mg

I used fresh blueberries, kiwi, oranges, strawberries, grapes and on and on! Not only was it great, it was beautiful served in a trifle dish, as you could see all of the bright colors! 1 head romaine lettuce, torn into bite-size pieces1/2 orange bell pepper, julienned1/2 red bell pepper, julienned1/2 yellow bell pepper, julienned1/4 ounce Parmesan cheese, thinly sliced1/4 cup raspberry vinaigrette salad dressingIn a large bowl, toss together the lettuce, orange pepper, red pepper, yellow pepper and cheese. 1 cup chopped golden raisins1/2 teaspoon salt1 1/2 cups chopped walnuts1 cup chopped cranberries1 cup unsweetened crushed pineapple1/4 cup grated lemon peel1 cup flaked coconut1/3 cup orange juice8 packets artificial sweetener1 teaspoon ground mace1 teaspoon ground allspice1 teaspoon baking soda1 1/2 cups all-purpose flourMix sugar substitute with orange juice. Pour over chopped cranberries. Soak 1 hour, mixing often. Mix raisins, nuts, coconut, lemon rind in flour until well coated. Add cranberries and orange juice mixture. Sprinkle baking soda over mixture, and mix. Mix in spices. Fold in crushed pineapple. Pour batter into a greased and floured 9 inch loaf pan. Bake at 325 degrees F (165 degrees C) for 40 minutes.
