Free Recipe: Patout's Boiled Crawfish

8 servings
MMMMM------------------------FOR THE BOIL-----------------------------
40 lb Live crawfish
1 c Salt
1/2 c Ground white pepper
1/2 c Ground red pepper
1/2 c Ground black pepper
5 lb Small white onions
12 ea Ears of corn, shucked
5 lb Small new potatoes

MMMMM--------------------------SPRINKLE-------------------------------
1/2 c Ground white pepper
1/2 c Ground red pepper
1/2 c Ground black pepper
2 c Salt

Alex Patout describes Crawfish as "a delicacy made for sharing--
in fact, in Cajun country, boiling crawfish for only two people
counts as a venial sin."
Wash the crawfish well and pick out any fish bones or other
debris. Fill a great big (40-quart) Stockpot a quarter full of
water. Add the salt and peppers and bring to boil. Add the whole
onions, the corn, and the new potatoes (it will be easy to remove
them later if you put them in a cloth sack). Return to boil, cover,
lower heat to medium, and let cook for 8 minutes. Add crawfish,
cover again and raise heat to high. After steam begins to escape
from under the lid, cook 7 minutes more. Remove from heat and
let sit for 4 minutes. Do *NOT* remove the lid until this point!
Remove the onions, corn, and potatoes to a bowl and drain the
crawfish. Place the crawfish in a large insulated container (an
ce chest works well, as do the thick waterproof boxes chickens
are shipped in, which your butcher may give you for free). Have
your *SPRINKLE* ready and sprinkle over the crawfish and mix them
well to coat. Cover and let sit for 7 minutes.
Serve immediately with the onions, corn, new potatoes, and
lots of French bread on a large table covered with plenty of
paper. When everyone has eaten his fill, everyone "peels for
the house." The peeled tails can then be used in cold crawfish
cocktail or salad or for Fried Crawfish the next day.
Serves 8-10
NOTE: Most of the salt is not added until after the cooking
process because too much salt added during cooking makes the
flesh of the crawfish adhere to the shell.

Free Recipe: Plantation Pork Chops

4 Servings
Ruth Lara (FKGT17A)
4 Pork chops; loin,
-loin, double-cut
1 tb Pecans; chop fine
2 c Corn bread stuffing
Salt
Pepper
2 tb Melted butter
1/4 c Corn syrup; light
1/3 c Orange juice
1/2 ts Orange peel; grated

Have butcher cut a pocket or with a sharp knife cut a horizontal slit in
side of each chop forming a pocket for stuffing. Combine stuffing with
butter, 1/4 tsp salt, orange juice and pecans. Fill pockets with stuffing.
Sprinkle chops with salt and pepper. Place in crock pot. Brush with mixture
of corn syrup and orange peel. Cover and cook on low 6 to 8 hours. Uncover;
turn control to high and brush with sauce again. Cook on high for 15 to 20
minutes. makes 4 seervings.

Free Recipe: Rye Yeast Bread

1 servings
1/3 c Water 3 tb Oil
1 c White grape juice; 4 c Rye flour
1 pk Quick-rise yeast; (1 tb) -plus up tp 1/2 cup
1 ts Salt

Warm the water and grape juice to about 115 F and stir in the yeast.
Let the mixture stand for about 10 minutes or until it is foamy. Stir
in the salt, oil, and 2 cups of the flour, and beat it with a spoon
or mixer until it is smooth.

Add enough of the rest of the flour to make a soft dough. Knead the
dough on a floured board for 10 minutes. Place the dough in an oiled
bowl, turn it over so the top of the ball is also oiled, and cover it
with a towel. Let it rise in a warm (85 to 90 F) place for about 45
minutes, or until it is doubled in volume.

Shape the dough into a loaf, place it in an oiled 8 x 4 inch loaf
pan, and let it rise in a warm place again for about 30 minutes, or
until it doubles in volume. Bake at 425 F for 10 minutes, then lower
the oven temperature to 350 F for an additional 35 to 45 minutes of
baking. Remove it from the oven when the loaf is brown and has pulled
away from the sides of the pan slightly. Makes one loaf.

Free Recipe: Shrimp Chowder

1 Servings
2.00 cn Cream of chicken soup
2.00 cn Potato soup
1.00 cn Corn, drained
2.00 c Evaporated milk
0.25 c Onion, chopped
2.00 c Shrimp (frozen)
3.00 oz Cream cheese

Brown onions. Saute in 1 tablespoon butter. Combine remaining
ingredients except cream cheese in crock pot. Cook on medium high
heat for 3 hours. In the last 15 minutes add cream cheese. Randy Rigg

Free Recipe: Steamed Artichokes with Orange Aioli Dipping Sauce

8 Servings
8 lg Artichokes
2 c Mayonnaise
8 Garlic cloves; minced
2 tb Olive oil
1 tb Orange juice, frozen concent
1 tb Orange zest

Recipe by: Donald Cope, Doubletree Hotel, Monterey Prepare artichokes
in the following manner: Discard lower leaves and stems and steam
upright 30-45 minutes or until base can be pierced with a sharp
knife. Drain inverted and chill. Make aioli by combining remaining
ingredients and chill.
