Free Recipe: Steamed Artichokes with Orange Aioli Dipping Sauce

8 Servings
8 lg Artichokes
2 c Mayonnaise
8 Garlic cloves; minced
2 tb Olive oil
1 tb Orange juice, frozen concent
1 tb Orange zest

Recipe by: Donald Cope, Doubletree Hotel, Monterey Prepare artichokes
in the following manner: Discard lower leaves and stems and steam
upright 30-45 minutes or until base can be pierced with a sharp
knife. Drain inverted and chill. Make aioli by combining remaining
ingredients and chill.

Low-Fat Recipes: Orange Johnny Cake | Submitted By: Marcie Peschong

1 (8.5 ounce) package dry corn muffin mix1 egg, beaten1/3 cup milk3 tablespoons grated orange zestPreheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan. In a large bowl, stir together muffin mix, egg, milk and orange zest. Pour batter into prepared pan. Bake in preheated oven for 20 to 25 minutes, until golden brown. Amount Per Serving  Calories: 88 | Total Fat: 2.5g | Cholesterol: 19mg

Diabetic Recipes: Lemon-Orange Orange Roughy | Submitted By: Brian Ehrler

1 tablespoon olive oil4 (4 ounce) fillets orange roughy1 orange, juiced1 lemon, juiced1/2 teaspoon lemon pepperHeat oil in a large skillet over medium-high heat. Arrange fillets in the skillet, and drizzle with orange juice and lemon juice. Sprinkle with lemon pepper. Cook for 5 minutes, or until fish is easily flaked with a fork. Amount Per Serving  Calories: 140 | Total Fat: 4.3g | Cholesterol: 67mg
