Free Recipe: Summer Berry Pie

8 Servings
1 1/2 c Raspberries
1 1/2 c Strawberries; sliced
1 c Blueberries
1 Pie crust (9 inch); baked
-and cooled
3/4 c Sugar
3 tb Cornstarch
1 1/2 c Water
1 pk Strawberry gelatin powder;
-jello, 4-serv. pkg
8 oz Cool whip®; 1 tub

Recipe by: Cool Whip Preparation Time: 0:20 Mix berries and pour into
pastry shell. Mix sugar and cornstarch in med. saucepan. Gradually
stir in water until s Refrigerate 3 hours. Spread whipped topping
over pie before serving. Garn

1 (15.5 ounce) can black beans, rinsed and drained1 (14.5 ounce) can chopped tomatoes, drained1 (14 ounce) can corn kernels, drained1 red onion, chopped1/2 cup chopped mango1 tablespoon fresh lime juice1 teaspoon olive oil1 tablespoon fresh cilantro leavesStir together the black beans, tomatoes, and corn. Add the onion, mango, lime juice, and olive oil and stir. Garnish with cilantro to serve. Amount Per Serving  Calories: 52 | Total Fat: 0.6g | Cholesterol: 0mg

Diabetic Recipes: Summer Bean Salad I | Submitted By: sakoch

1 (15 ounce) can light red kidney beans, drained and rinsed1 (15 ounce) can black beans, drained and rinsed1 small green bell pepper, chopped1 small yellow bell pepper, chopped1 1/2 cups chopped fresh tomatoes2 green onions, finely chopped1 cup chunky salsa1/2 cup red wine vinegar2 tablespoons chopped cilantroIn a bowl, gently toss together the kidney beans, black beans, green bell pepper, yellow bell pepper, tomatoes, and green onions. In a separate bowl, mix the salsa, vinegar, and cilantro. Pour dressing over the bean mixture, and gently stir to coat. Chill at least 1 hour in the refrigerator before serving. Amount Per Serving  Calories: 69 | Total Fat: 0.4g | Cholesterol: 0mg

1 banana1 cup frozen strawberries1 cup frozen blueberries1 cup frozen cherries4 ice cubes1/2 cup orange juice3/4 cup vanilla yogurt1/2 teaspoon honey (optional)Place the banana, strawberries, blueberries, cherries, and ice cubes into a blender. The reviewer gave this recipe 5 stars. This recipe averages a 4.4 star rating. Great flavor and very refreshing! I used frozen banana, blueberries and cherries, and fresh strawberries, plain yogurt and added about 1/2 tsp vanilla extract. I probably used less orange juice, as I was leery of the citrus flavor, but then added a splash of skim milk to get the right texture. I also skipped the ice, as most of my fruit was frozen so I didn't think I needed it, and sweetened to taste with agave nectar. I had frozen fresh cherries specifically to try in a smoothie, and this recipe is a perfect example of how to use them that way! Thanks for sharing! Was this review helpful? [ YES ]
