Healthy Appetizers: Spicy Pineapple Sauce | Submitted By: Michele O'Sullivan
1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved1 tablespoon cornstarch1 teaspoon ground ginger3/4 cup orange juice2 tablespoons maple syrupIn a medium bowl, mix the crushed pineapple, cornstarch and ground ginger. Gradually stir in enough of the reserved pineapple juice to make the mixture smooth. In a medium saucepan over medium heat, blend orange juice and maple syrup. Cook and stir 5 minutes, until clear and thickened. Mix in the pineapple mixture. Continue to cook and stir until well blended and thick, about 15 minutes. Mini ham and pineapple pizzas

Preheat oven to 200°C/180°C fan-forced. Lightly grease a large baking tray. Using a 7cm-round cutter, cut 8 rounds from pizza base. Place rounds on prepared tray.
Spread each round with 1/2 teaspoon tomato paste. Top with ham, pineapple and cheese. Bake for 10 minutes or until cheese has melted and base is crisp.

1 cup finely chopped fresh pineapple1/2 cup diced red bell pepper1/2 cup diced green bell pepper1 cup frozen corn kernels, thawed1 (15 ounce) can black beans, drained and rinsed1/4 cup chopped onions2 green chile peppers, chopped1/4 cup orange juice1/4 cup chopped fresh cilantro1/2 teaspoon ground cuminsalt and pepper to tasteIn a large bowl, toss together pineapple, red bell pepper, green bell pepper, corn, black beans, onions, green chile peppers, orange juice, and cilantro. Season with cumin, salt, and pepper. Cover, and chill in the refrigerator until serving.
