Low Glycemic Impact Recipes: Irish-Style Lamb Stew | Submitted By: MICHELLE0011
1 pound cubed lamb meat1 large onion, halved and sliced1 pound baking potatoes, peeled and sliced1 carrot, peeled and sliced1 large stalk celery, sliced2 tablespoons chopped fresh parsleysalt and pepper to taste2 cups beef stock1 tablespoon chopped fresh parsley, for garnishPreheat the oven to 325 degrees F (165 degrees C). Layer the lamb meat, onion, potatoes, carrot and celery in an oven proof pot or casserole dish. Season each layer with parsley, salt and pepper as you go. Pour in the beef stock and cover tightly. Bake for 1 1/2 to 2 hours in the preheated oven, until vegetables and meat are very tender. Divide into bowls and garnish with additional parsley. Low Glycemic Impact Recipes: Fishboy's Beer Belly Shrimp | Submitted By: Fishboy
2 pounds large shrimp, peeled and deveined with tails attached1 cup beer2 tablespoons chopped fresh parsley2 tablespoons vegetable oil4 teaspoons Worcestershire sauce1 clove garlic, minced1/8 teaspoon salt1/4 teaspoon ground black pepper1/8 teaspoon hot sauceCombine all ingredients in a large bowl. Stir well to coat the shrimp. Place in a large shallow dish and refrigerate. Let marinate for 2 to 3 hours, stirring occasionally. Heat oven broiler. Drain shrimp. Thread shrimp through neck and tail onto six 14-inch skewers so that shrimp will lie flat. Place skewers on a lightly greased rack of a broiler pan. Broil 5 inches from heat for 3 minutes. Turn skewers and broil for an additional 1 to 2 minutes, or until shrimp turn pink. Serve warm with cold beer. 2 (6 ounce) swordfish steaks2 tablespoons lemon juice1 tablespoon lemon pepper1 tablespoon dried dill weedPreheat an outdoor grill for high heat, and lightly oil grate. 4 cloves garlic, minced2 onions, chopped1 tablespoon olive oil1 (28 ounce) can crushed tomatoes6 cups water1/2 cup chopped fresh parsley1/2 cup chopped fresh cilantro2 tablespoons Worcestershire sauce1 teaspoon ground cinnamon1 teaspoon paprika1 1/2 pounds cod fillets, cubed3 ounces dry pastasalt to taste1 tablespoon ground black pepperIn a large pot over medium heat, saute the garlic and onions in the olive oil for 5 minutes, stirring constantly. Add the tomatoes with liquid, water, parsley and cilantro. Bring to a boil, reduce heat to low and simmer for 15 minutes. Stir in the Worcestershire sauce, cinnamon, paprika and fish. Simmer over medium heat for 10 minutes. Add the pasta and simmer for an additional 8 minutes, or until pasta is tender. Season with salt to taste and ground black pepper.
