Make little chocolate mousses

Step 1:
Using an electricmixer, beat eggwhites until soft peaks form.

Step 2:
Using a metal spoon, stir yolks into melted chocolate until combined.

Step 3:
Stir one-third of eggwhite mixture into chocolate mixture until combined.

Step 4:
Gently fold in remaining eggwhite mixture.

Step 5:
Pipe or spoon mixture into eight 70ml-capacity glasses.

I was looking for a white chocolate fondant for my wedding cake and found this Candy Clay recipe which works great for a fondant http://www.baking911.com/recipes/cakes/candyclay.htm. I've used this on numerous cakes and have perfected the use as a fondant. Every person that's tried it said that it's the best fondant they've ever eaten. You can substitute dark chocolate for the white chocolate, and it tastes exactly like tootsie rolls. I used this for molding a monkey topper for a wedding cake. This recipe is so quick, easy, and tasty, there's no reason not to try it! Once you do, you'll never try another fondant again!

Chocolate: German Chocolate Angel Pie II | Submitted By: Jinnie

3 egg whites1 pinch salt1/8 teaspoon cream of tartar3/4 cup white sugar3/4 cup finely chopped pecans1 teaspoon vanilla extract4 (1 ounce) squares German sweet chocolate, chopped3 tablespoons strong brewed coffee1 cup heavy cream1 teaspoon vanilla extractPreheat oven to 275 degrees F (135 degrees C). In a large glass or metal mixing bowl, beat egg whites until foamy. Add cream of tartar and salt and beat until whites stand in soft peaks. Add sugar gradually and beat until very stiff. Fold in chopped nuts and 1 teaspoon. vanilla. Turn the meringue into a buttered 9 inch pie plate. Spread over bottom and sides of plate, building up the sides 1/2 inch above the edge of the plate. Bake in preheated oven for 60 minutes. Cool. In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and stir in coffee. In a large bowl, whip the cream to soft peaks. Whisk in vanilla. Fold 1/3 of the cream into the melted chocolate, then fold the chocolate mixture back into the whipped cream until no streaks remain. Work quickly to prevent the chocolate from seizing up. Spoon mixture into meringue shell. Chill for 2 hours in the refrigerator. Cookies: Chocolate Crinkles II | Submitted By: Ingrid

1 cup unsweetened cocoa powder2 cups white sugar1/2 cup vegetable oil4 eggs2 teaspoons vanilla extract2 cups all-purpose flour2 teaspoons baking powder1/2 teaspoon salt1/2 cup confectioners' sugarIn a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets. Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool. Amount Per Serving  Calories: 58 | Total Fat: 2g | Cholesterol: 12mg

Praline Recipes: Praline Chocolate Cake | Submitted By: Norae

2 cups milk2 1/2 cups white sugar1 1/2 cups unsalted butter1/2 pound unsweetened chocolate4 eggs2 1/3 cups cake flour2 teaspoons baking powder1/2 cup toasted almonds, finely chopped1/2 cup chopped toasted pecans1/4 cup confectioners' sugar1/2 cup toasted pecansPreheat oven to 325 degrees F (165 degrees C). Grease a 10 inch tube pan. Separate the egg yolks from the whites and keep the egg whites cold. Combine milk, 1 1/2 cups of the sugar, 1 cup of the butter and all of the chocolate and bring to a boil in the top half of a double boiler over medium heat. Let cool slightly and stir in the egg yolks, flour, and baking powder. Beat for about 2 minutes with an electric mixer on medium speed. In a glass or metal bowl beat the egg whites until stiff. Gently fold the beaten egg whites into the chocolate mixture. Pour batter into a greased 10 inch tube pan. Bake for 50 minutes at 325 degrees F (165 degrees C). Let cake cool in pan for 15 minutes then turn out on to a wire rack to finish cooling. To Make Frosting: Melt 1 cup sugar in a heavy pan. Once melted and slightly amber colored add the finely chopped nuts. Pour into a buttered flat sheet pan to cool. Once cool and set crush to a powder using a food processor. Cream 1/2 cup of the butter until light and fluffy, gradually mix in the nut powder and the confectioners' sugar beating until smooth and creamy. Spread frosting over top of cake and garnish with whole pecan halves. Amount Per Serving  Calories: 610 | Total Fat: 38.7g | Cholesterol: 116mg

Gluten-Free Recipes: Chocolate Chip Cookies (Gluten Free) | Submitted By: Barbara Arnold

3/4 cup butter, softened1 1/4 cups packed brown sugar1/4 cup white sugar1 teaspoon gluten-free vanilla extract1/4 cup egg substitute2 1/4 cups gluten-free baking mix1 teaspoon baking soda1 teaspoon baking powder1 teaspoon salt12 ounces semisweet chocolate chipsPreheat oven to 375 degrees F ( 190 degrees C). Prepare a greased baking sheet. In a medium bowl, cream butter and sugar. Gradually add replacer eggs and vanilla while mixing. Sift together gluten- free flour mix, baking soda, baking powder, and salt. Stir into the butter mixture until blended. Finally, stir in the chocolate chips. Using a teaspoon, drop cookies 2 inches apart on prepared baking sheet. Bake in preheated oven for 6 to 8 minutes or until light brown. Let cookies cool on baking sheet for 2 minutes before removing to wire racks. Amount Per Serving  Calories: 288 | Total Fat: 13.5g | Cholesterol: 20mg

Meringues: Chocolate Pudding with Meringue | Submitted By: SALLYCOOKS

1 (1 ounce) square unsweetened chocolate, chopped1 cup evaporated milk3 eggs, separated3 tablespoons white sugar1 pinch salt3 tablespoons white sugar1 tablespoon unsweetened cocoa powderPreheat oven to 325 degrees F (165 degrees C). Butter a 1 quart baking dish or pudding basin. Melt chocolate over low heat in small saucepan. Stir in milk and heat through. Remove from heat and let cool slightly. In a medium bowl, beat eggs. Beat in 3 tablespoons sugar and salt. Beat in chocolate mixture. Pour into prepared dish. Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake in preheated oven 30 minutes, until set. In a clean, dry bowl, beat egg whites until stiff. Beat in 3 tablespoons sugar and cocoa. Spoon meringue over baked pudding and return pudding to oven to brown meringue, 2 to 8 minutes. Amount Per Serving  Calories: 164 | Total Fat: 7.6g | Cholesterol: 159mg
