Meatloaf Recipes: Best Ever Meatloaf with Brown Gravy | Submitted By: MARBALET

1 1/2 pounds ground beef3/4 cup fresh bread crumbs1/2 cup chili sauce1 egg1/4 teaspoon salt1/4 teaspoon freshly ground black pepper1 cup fresh sliced mushrooms2 tablespoons minced onion1 tablespoon butter1 cup beef broth2 tablespoons water1 tablespoon cornstarchPreheat oven to 350 degrees F (175 degrees C). In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan. Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving. While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened. This may sound corny, but ever since hubby and I got married, every Valentines Day (or thereabouts), I make a heart shaped meatloaf. To add to my cornball personality, I "write" "I love you" with onions. Our girls obviously grew up with this tradition and believe it or not, look forward to this every year. I normally use only turkey meat to make my loafs, however, my older daughter has decided that she prefers her meatloaf made with beef. (I used half of each) Anyway, I didn't have any chili sauce in the house, so I can't comment on that issue. Once the meatloat was assembled, I poured about a half of a can of the beef broth over it. To make the gravy, I made a roux, (no cornstarch) using some of the fat from the drippings and then added more broth. Drew, Tyler and I really enjoyed this, however, poor Ash came down with a tummy virus this afternoon. Holly, I'm sure she'll love the leftovers when she's better! Was this review helpful? [ YES ]

Meatloaf Recipes: A Firefighter's Meatloaf | Submitted By: Yumbolt

2 slices whole wheat bread2 pounds ground beef1 green onion, chopped2 tablespoons chopped onion1 cup medium salsa2 tablespoons whole grain Dijon mustard1 teaspoon Worcestershire sauce2 tablespoons minced garlicsalt and pepper to taste1 tablespoon barbeque saucePreheat the oven to 375 degrees F (190 degrees C). Soak the bread in warm water in a small bowl. Place the beef in a large bowl. Drain bread and add to beef along with green onion, onion, salsa, Dijon mustard, Worcestershire sauce, garlic, salt and pepper. Mix by hand until well blended. Form into a loaf and place in a greased loaf pan. Bake for 1 hour in the preheated oven. Drain off excess fat and top with barbeque (Diana) sauce. Return to the oven and bake for an additional 15 minutes. Amount Per Serving  Calories: 520 | Total Fat: 33.4g | Cholesterol: 136mg
