Dessert Gelatins: Creamy Cucumber Gelatin Salad | Submitted By: COOKINGQUEEN75
2 (3 ounce) packages lime flavored gelatin mix2 cups boiling water1 (8 ounce) package cream cheese, softened1 cup creamy salad dressing, e.g. Miracle Whip ™1 medium cucumber, peeled and chopped1 dill pickle1 tablespoon grated onionPour the gelatin mix into a medium bowl, and stir in the boiling water. Set aside to cool slightly. In a blender or large food processor, combine the cream cheese, salad dressing, cucumber, pickle, and onion. Process until fairly smooth. Stir into the gelatin mixture. Pour into a mold, or leave in the bowl. Refrigerate for 3 hours, or until firm. 2/3 cup white sugar1 1/2 cups milk2 (.25 ounce) packages unflavored gelatin (such as Knox ®)2 cups boiling water2 teaspoons almond extract1 (11 ounce) can mandarin orange segments, undrainedWhisk the sugar into the milk in a mixing bowl until dissolved. Sprinkle the gelatin over top, and let stand for 1 minute to soften. Whisk the boiling water and almond extract into the gelatin mixture until the gelatin has dissolved. Pour into a 7-inch square pan. Refrigerate until firm, about 4 hours. Once firm, cut the gelatin into 1-inch squares, and place into a mixing bowl.
