The Cranberry Institute, in conjunction with Taste, are calling for Australians to submit their own great tasting, healthy cranberry recipes for the chance to win a master class with celebrity chef Darren Simpson, followed by dinner at La Scala on Jersey (flights, accommodation and transfers included) and an online nutrition consultation with renowned dietitian, Kate Di Prima.

How to enter
All you have to do is submit a recipe of your own design featuring the little red fruit that packs a powerful punch - the cranberry. You can use sweetened dried cranberries, frozen cranberries, or cranberry juice.

To ensure your recipe is healthy, just follow the simple health criteria set by dietitian Kate Di Prima.

For healthy meals and cran-tastic snacks, recipes need to include carbohydrates and protein - as a general rule, try to ensure there are more carbohydrates in the dish (such as grains, pasta, rice, etc) than proteins, and any fats added must be in small quantities. Try to aim for low-GI carbohydrates, wholegrains and lean proteins.

For those with a sweet tooth, nutritious dessert recipes should aim to have some carbohydrate and protein, and saturated fats such as butter and cream should be kept to a minimum.
